How long should you marinate meat? Follow the recipe for your particular cut and marinade. More time does not always mean a better result. Tender steaks may only need seasoning, while a recipe using a firmer cut may call for several hours in the refrigerator.
For Persian barbecue, the useful questions are: which cut are you using, how large are the pieces, what is in the marinade, and when will you cook? This guide from Persia Meat Shop Newmarket helps you plan steak, lamb kebab and joojeh without confusing flavour development with safe storage.
A marinade cannot make every cut behave like tenderloin. Ribeye and striploin are suitable for quick grilling with simple seasoning. A marinating steak such as flank or sirloin tip calls for a different approach. Canada Beef gives a broad 4–24 hour refrigerated marinating range for its marinating-steak guidance; the individual recipe should determine the timing. Canada Beef: marinating steaks.
For kebab, ask for even-sized pieces suitable for the cooking method. An oversized piece and a small piece on the same skewer are difficult to finish together, regardless of how long they have been seasoned.
| Meal | How to plan | What to ask the butcher |
|---|---|---|
| Ribeye, striploin or tenderloin | Simple seasoning may be enough; follow a recipe if marinating | Even steak thickness and preferred trimming |
| Marinating beef steak | Allow the recipe’s refrigerated time; Canada Beef gives 4–24 hours as a broad range | Which cut suits the marinade and grill |
| Lamb shish kebab | Use a lamb-specific recipe and its timing | Grilling cubes of consistent size |
| Joojeh kebab | Use a chicken-specific recipe; include all refrigerated storage time in your plan | Breast or thigh, with even portions |
| Pre-marinated meat | Follow the seller’s storage and cooking instructions | Ingredients, allergens and when to cook |
Onion, saffron, lemon or yogurt can be part of a Persian marinade, depending on your recipe. They do not all behave identically, so do not transfer the timing from one recipe to another. A strongly acidic marinade and a lightly seasoned mixture may need different treatment.
USDA guidance allows poultry in a refrigerated marinade for up to two days. That is an upper handling limit, not a recommendation to marinate every chicken dish for 48 hours. It also does not restart the storage clock for chicken already in your fridge. USDA: poultry marinating.
The USDA notes that prolonged marinating can break down meat fibres and produce a mushy texture. Do not assume an extra day will improve a recipe. If you repeatedly get a soft exterior, use the recipe’s shorter timing or discuss a more appropriate cut. USDA: grilling and marinating.
These points follow Health Canada’s barbecue guidance. A marinade is seasoning, not a method for making spoiled meat safe.
No. Plan the recipe around refrigerated marinating. Leaving it warm is not a suitable shortcut.
No. Include the time before marinating and follow the product’s label and storage guidance. Consult Health Canada’s storage advice.
Start with a cut and cooking method suited to the dish. Changing the acidity without adjusting a tested recipe can give an uneven result.

Record the cut, piece size, ingredients, refrigerated time and result. If a batch develops a soft exterior, compare it with the same recipe using its shorter suggested time; do not change the acid, cut and timing all at once.
Use the timing in a recipe developed for that product. Canada Beef’s marinating-steak instructions are for particular beef preparations, not a universal timetable for lamb chops or joojeh. For a purchased marinated product, ask when it was prepared and when it should be cooked. Adding fresh marinade does not restart its storage period.
